Gastronomy in Anguilla


A vibrant tourist destination, Anguilla offers a variety of culinary experiences. There are more than 70 restaurants on the island, serving up an eclectic but delectable blend of international cuisines with Caribbean flavors. Local seafood specialties include lobster, conch, and grouper prepared with spices and sauces that have Creole influences. Fresh snapper is popular while shredded salt fish with peppers and onions is a much-loved breakfast dish.

Coconut and pigeon peas are also favored local ingredients. Potatoes, limes, and mangoes as well as several varieties of herbs are found on the island. Pigeon peas are combined with seasoned rice as an accompaniment and Johnny cakes, made without yeast, are another local favorite.

Fine French cuisine is also found on the island with dishes such as foie gras and snail balancing creative French meat, game, and seafood dishes. Asian influences are visible with dishes such as snapper with teriyaki and soya and North Indian chicken present on the menu. Lamb and veal are also widely enjoyed on the island.

Many restaurants boast impressive wine lists and some of them have gained mentions in prestigious wine journals. However, the local favorite is rum, straight or mixed with other flavors to make delicious cocktails.
