Gastronomy in Japan

Food in Japan is generally of a very high quality and most Japanese people tend to be sophisticated diners. Most Japanese restaurants specialize in one particular type of food. There is an emphasis on seasonality, quality and presentation.

Rice, Congee, noodles of different sorts including Ramen, Soba and Udon, and Donburi are popular main meals. Fish and seafood, soya bean and mushrooms are commonly used in the food.

Sushi is the most famous Japanese dish outside of Japan, and one of the most popular dishes among the Japanese themselves. It consists of rice rolled with vegetables, fish, or pickles, then wrapped in nori and sliced into rounds. Sashimi, which is thinly sliced, raw seafood, is also popular. Tempura and nabe are other favoured food items.

Sake, a rice wine that contains 15% alcohol and is made from fermented rice, is the popular drink.
